This ash-ripened cheese is our homage to the mountain. Elegant and creamy on the tongue, this cheese is a labor of love, and its flavor is a little stronger than the other bloomie rind cheeses we create. The ash coating give a boost to the ripening cultures and creates a very soft texture under the rind.
